SUPER EASY CHICKEN ENCHILADAS

YOU WILL NEED

– 2 pounds boneless skinless chicken breasts – 1 tablespoon taco seasoning – 1/2 small onion – 1/4 teaspoon salt – 1 cup (240g) sour cream – Enchilada sauce – 10 8-inch tortillas – 1 1/2 cup (6oz) shredded Mexican cheese blend

STEP 1

Cook chicken breasts and onions. Shred chicken and mix with sour cream. Fill tortillas with 1/3 cup of the chicken mixture and layer in a baking dish. 

STEP 2

Make enchilada sauce or use your favorite store-bought sauce and pour over the enchiladas. 

STEP 3

Add cheese and bake until cheese is melted and sauce is bubbly around the edges. 

STEP 4

Serve, top with sour cream and cilantro, and enjoy!!
