BUTTERY ROASTED CARROTS

YOU WILL NEED

– 2 pounds carrots – 2 tablespoons salted butter  – ¼ teaspoon salt – ¼ teaspoon black pepper

STEP 1

In a medium bowl, combine peeled and sliced carrots with melted butter, salt, and pepper.

STEP 2

Stir to combine until the carrots are well-coated. 

STEP 3

Arrange carrots on a rimmed baking sheet in a single layer. Bake until carrots are caramelized around the edges and fork tender.

STEP 4

Transfer to a serving bowl, sprinkle with parsley, serve, and enjoy!
