YOU WILL NEED
CREME ANGLAISE – heavy cream – milk – large egg yolk – granulated sugar – vanilla extract SOUFFLES – chopped semi-sweet chocolate – unsalted butter – large egg whites – egg yolks – cream of tartar
PREPARE CREME ANGLAISE
Cook cream, egg yolk, sugar, and vanilla together until the mixture is thick enough to coat the back of a spoon.
PREPARE SOUFLES
Beat butter and egg yolks into melted chocolate before folding whipped egg whites into the mixture.
BAKE
Transfer to ramekins and bake until souffles are tall and beautiful. Top immediately with the prepared creme Anglaise.
SERVE AND ENJOY
Souffles will begin to drop shortly after coming out of the oven, so serve immediately and enjoy!
