MINI LOAF OF PUMPKIN BREAD

YOU WILL NEED

Pumpkin Bread – ½ cup all-purpose flour – ¼ teaspoon baking soda – ¼ teaspoon salt – 1 teaspoon pumpkin pie spice   – ¼ cup pumpkin puree – 1 large egg – 2 tablespoons vegetable oil – 1 tablespoon milk  – ½ cup  granulated sugar Cinnamon Sugar Topping (optional) – 1 teaspoon granulated sugar – ¼ teaspoon ground cinnamon

STEP 1

In a small bowl, whisk together flour, baking soda, and spices. In a medium bowl, whisk together wet ingredients and sugar. 

STEP 2

Stir the dry ingredients into the wet until just combined.

STEP 3

Transfer batter to parchment paper-lined mini loaf pan. 

STEP 4

Sprinkle cinnamon sugar evenly over the top of the batter. 

STEP 5

Bake until a toothpick inserted into the center of the loaf comes out clean. 

STEP 5

Allow bread to cool for 10 minutes, slice, and enjoy!
