This delicious and easy small batch of Pico de Gallo recipe makes just enough for a single meal so nothing goes to waste.
I’m sharing a super simple and easy recipe with you today, a Small Batch of Pico de Gallo!
I always feel funny posting such simple recipes because I wonder if anyone really needs them, but then I remember that two of the most popular recipes on the site are my fabulously simple Butter and Garlic Green Beans and two-ingredient Oven-baked Beef Ribs, and I think I’m maybe thinking too hard.
Plus, figuring out how to make a small batch of homemade pico de gallo was a total game changer for me because I LOVE pico de gallo. It makes everything taste better, but if you buy it from the store, it’s always so expensive and sold in such big containers that most of it ends up going bad in my fridge.
This recipe will run you just a couple bucks, makes the perfect amount for a single meal, and if you have a chopper attachment for your immersion blender, it takes approximately two minutes to make.
And I’m just going to take a hot second to plug immersion blenders in general. I wouldn’t put them on the same tier of must-haves as your pots and pans, but if you have Amazon credit, a birthday coming up, a little extra cash, give them a look!* I didn’t think I need an immersion blender until I got one, and now I use it all the time because it’s so versatile and easier to clean than my food processor and blender.
Anyway, even if you don’t have a mini chopper, this recipe is super quick to throw together since it’s just a little batch. Once you chop everything, you just toss your veggies in a bowl, add a squeeze of lime, and instant upgrade to whatever you are serving it over!

Small Batch of Pico de Gallo
Ingredients
- 1 Roma tomato
- 1/4 medium onion
- 1/2 jalapeño *
- 1/2 cup loosely packed cilantro
- Juice from 1/4 lime (about 1 1/2 teaspoon juice)
- Salt
Instructions
With Immersion Blender Chopper
- Very roughly chop tomato, onion, jalapeño, and cilantro. Place jalapeño, cilantro, and onion in the chopper first. Add tomato and lime juice over the top and process until pieces reach desired size. Be careful not to over-process the mixture, as you can easily liquify the tomatoes if you're not careful. Add salt to taste if desired.
By Hand
- Finely chop tomato, onion, jalapeño, and cilantro. Combine in a small bowl and squeeze lime over the top. Stir everything together. Add salt to taste if desired.

Absolutely LOVE pico de gallo! A summertime favorite. I’m one that loves cilantro, however my husband is not a huge fan, so I have to cut down a bit.

Question!! I guess I’m the “odd one out” here. I really cannot stand the “soapy” taste of fresh cilantro. Any suggestions as to what could be used to replace it?? If not perhaps just cutting down the amount. Oddly enough, I can deal with the dried cilantro, it’s just the fresh I can’t go.
Thanks!! cilantro or not, I’m going to try this. I love it at our local Mexican restaurant and it does have something “green” in it other than the pepper..so perhaps everything else would overcome the taste??

Not the odd one out, I know SO many people who feel this way! You can cut down or just omit the cilantro completely or replace it with a bit of flat leaf/Italian parsley. Some people really prefer the taste of parsley over cilantro for pico de gallo.

Some people have a genetic quirk that makes cilantro taste like soap. Unfortunately they don’t enjoy this herb like some of us do (my favorite salad is simply cilantro, tomato, avocado and lime juice). As Tracy said, try subbing flat leaf Italian parsley for the cilantro in this recipe.

We love pico! Was looking for a small batch and this was perfect for my daughter and I! Plus it’s so easy to make, we’ll now have it fresh all the time! The store bought is a hit or miss! I didn’t have a jalapeno, so I used a serrano with the seeds out. Thanks for posting this! It’s delicious!

Pico de gallo is my jam! Extra jalapeno for me! Love making and eating that stuff and it adds such an awesome freshness that I love. Those mini choppers are da bomb! I use mine all the time, definitely weekly and makes things so much more convenient. Totally looking forward to seeing those tacos 🙂
