Easy Slow Cooker Beef Fajitas for Two

Easy slow cooker beef fajitas are a fantastic, cheap, and simple dinner for busy weeknights!

It’s slow cooker month here on Baking Mischief, because anything that lets us avoid turning on the oven and adding to the stifling summer heat is welcomed and appreciated.

Last week I posted my totally killer Slow Cooker BBQ Chicken Sandwiches for Two. Today we are switching over to beef, using a cheap, tough piece of meat and turning it into fantastic fall-apart tender and delicious fajitas!!

These easy slow cooker beef fajitas literally take less than ten minutes to toss together in the morning, and when you get home in the evening, your house will smell amazing, and you will have delicious fajita filling sitting there waiting for you.

Aside from being fast and easy, these fajitas are great because they are CHEAP. Since we have a long slow cooking time, we can use super inexpensive beef chuck, which can be tough and chewy if you treat it like regular old steak, but is PERFECT when you give it the benefit of extra cooking time. Cooked slow, it is tender, rich, and so flavorful.

You can buy a small chuck roast, chuck steak, or a package cut up for stew meat. Go with whatever is cheapest! As written, this is a recipe for two, but you can double or triple the ingredients with no changes to the cooking method or time if you are serving a family or want leftovers.

After the meat and veggies spend the day in the slow cooker (if you don’t like soft slow cooker veggies, see my note at the end of the recipe), throw some flour tortillas in the oven for a minute or two to warm up, and then go crazy assembling the fajitas of your dreams.

Ingredients

  • 1/2 pound beef chuck or stew meat
  • 1 bell pepper sliced
  • 1/2 large onion sliced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice about 1/2 lime
  • Flour tortillas soft taco size
  • Your favorite fajita toppings

Instructions

  • Place meat into your slow cooker. Drop bell pepper and onion slices over the top.
  • In a small bowl, whisk together chili powder, cumin, salt, pepper, soy sauce, and lime juice. Pour mixture over the meat and vegetables.
  • Place the lid on your slow cooker and cook on high for 3 to 4 hours or low for 7 to 9 hours. Meat is done when it is easily shreddable.
  • Transfer meat to a cutting board and shred with two forks before returning it to the liquid and vegetables.
  • Serve over warm tortillas with your favorite fajita toppings (I like sour cream and a bit of salsa). Enjoy!

Notes

This meat mixture is quite salty, which is perfect for fajitas, but if you are going to serve over salad or eat the mixture alone, omit the salt or use low-sodium soy sauce.
If you don't like the soft texture of slow cooker vegetables, you can cook the meat alone and saute the veggies over medium-high heat until they reach your preferred level of doneness just before serving.

    I followed your instructions & as usual, the meal was delicious!

    My family also gave this recipe 10+++ stars.

    I’m so green in the kitchen that I have to take things literally. I am not anywhere in my cooking process that I can
    ” just wing it” . for any recipe
    because I don’t know what this or that spice does to a recipe. (I am taking notes as I progress).

    Like, once I forgot to add the baking powder to a muffin recipe & they came out flat ~ Lol.
    I figure that the baking powder must be what gives the muffins the lift???

    Next,
    I hope you don’t mind me asking this question, but, I was wondering. ..
    “Do you perhaps have in your personal files a recipe for Barbacoa?”

    It’s a Mexican meal that they sell at this nearby Taco Food Truck. My son’s love it They eat it in tacos & drink the broth.-. But it can get a bit expensive going to the food truck to buy it.

    I looked on the Internet &
    oh my goodness, it was information OVERLOAD!!!

    There are so many different recipes,
    Most call for different meats, most use different chiles, etc
    The only thing most had in common was the bay leaves…lol

    I just am not experienced enough to decide whose recipe to trust.

    So, I was wondering if you might know how to make Barbacoa & just haven’t posted the recipe yet?

    If you do have a recipe,
    Would you share it with me?
    We are a family of 4.

    If you don’t have a recipe for Barbacoa,
    I’m absolutely still okay
    Because there are so many wonderful recipes on your site that I’ve yet to try & plan to.

    Hello,
    I hope you’re having a wonderful week.

    Question:
    When I make this recipe for 8,
    Do I increase the amount of lime juice?

    I used the recipe calculator on your site, it increases the other ingredients but the lime juice amount remained the same.

    I am a novice cooker – so I literally have to follow your recipes to the letter.
    My cooking skills are not good enough yet to just wing a recipe~ so please excuse my question if it seems too silly.

    Also,
    How many tacos is a serving?

    I’m cook for 2
    (love that you do small batch recipes~ Thank you!!)

    But, this time I will be cooking for
    4 adults.with hearty appetites ~I figure they’ll eat at least 4 tacos each

    So I’m not sure if the recipe for 8
    will make at least make 2-4 tacos per person?

    I made your Homemade Spaghettios last night for the second time (by request).
    It came out delicious ~ just like the first time.
    The recipe was easy to follow.

      Hi, Tyra. The lime amount was a formatting error. I fixed it, so it will scale up now too.
      -This makes about 2-3 fajitas/person (clarified that in the recipe as well).
      -If serving 4 big eaters, I would use:

      A 3 pound beef chuck roast trimmed of fat and cut into large chunks
      4 bell peppers, sliced
      2 large onions, sliced
      1 tablespoon + 1 teaspoon chili powder
      2 teaspoons ground cumin
      1/2 teaspoon salt
      1/2 teaspoon pepper
      1/4 cup soy sauce
      2 tablespoons lime juice, about 1 lime

      Hope that helps, and so happy to hear about the spaghettios and muffins!
